Andra is known for its spicy cuisine and today I'm going to share a wonderful recipe which is Andra style green chilli chicken. Now this is nice and spicy with lot of flavours in it. Let's get started and check out the recipe. For the Andra style green chilli chicken, first I'm going to marinate the chicken. For this recipe I have taken about one kilo of chicken with bone. Add 1 teaspoon of salt, the juice of half lemon, one table spoon ginger garlic paste, one table spoon curd, one large green chilli finely chopped, half teaspoon turmeric powder, one teaspoon garam masala powder, next I am going to add the paste of two medium sized onions, and one sliced onion. So mix everything. Let the chicken marinate for about 1 hour. So now we going to cook the chicken. It's been marinating for an hour. Take a nice white cadai. Pour about three table spoons of oil. Once the oil heats up, add some mustard seeds. Next add a few cumin seeds. Add a few curry leaves. Now gently drop in the marinated chicken pieces. So mix the chicken. Once you've added the chicken to the kalay, just mix it. So everything is well combined. So we going to let the chicken cook in its own juices. You can see there is enough liquid here for the chicken to cook. So there is no need to add any extra water. So you can see the chicken is no more pink. So now I'm going to close the karai and cook for about 15 minutes. So you can see the chicken has released a lot of water here. The juices are looking really nice. The chicken is almost cooked. It's about 80% cooked. So next we going to make a paste of green chillies and coriander. For this I have taken five green chillies and add a small bunch of coriander leaves. So we going to just grind it to a very coarse mixture. Not too tasty. So you can see I have ground the coriander and the green chillies without adding any water. So this is a nice coarse mixture. This is how you want it. So now add the coarsely ground. Coriander and chilli paste. Just mix it in. So the green chillies are going to add a lot of heat. So it's going to become a little more spicier now. So it will continue to cook. Till it becomes nice and thick. So at this point you can check for seasoning and add a little bit of salt. So just going to add another teaspoon of salt. You can leave the karai open and continue to cook. Till this thickens and you get a nice thick masala. You can see all the excess moisture is evaporated. The masala has become nice and thick. The oil is beginning to separate from the masala. So I'm going to finish of adding a few slit green chillies and add a few curry leaves. Andhra's stylish green chilli chicken curry is done. Remove it and serve it nice and hot. Andhra still green chilli chicken is a one pot dish with a lot of lovely flavours. Now you can adjust the spice according to your taste. But make sure you stick to the recipe for the best results.
