MAKE YOUR OWN SNICKERS!!! mmmkay yes these are just as delicious as they look and sound!! i first made these when i was recipe testing for my cookbook in 2017 and they are still a go-to dessert snack of mine. i almost don’t want to tell you that they’re gluten-free and vegan because i promise they’re still soo good!!   INGREDIENTS: shortbread cookie layer: 1 1/2 cup almond flour 3 tablespoons liquid coconut oil (melted and cooled) 2 tablespoons maple syrup or honey 1 teaspoon vanilla extract  caramel layer: 1 cup pitted medjool dates, softened in hot water for 10 minutes 2 tablespoons creamy nut butter (i use peanut butter) 1 teaspoon vanilla extract 1/2 cup roasted peanuts, halved  dark chocolate layer: 1 1/3 cup chocolate chips (I use dark chocolate!) 2 teaspoon coconut oil  #snickers

10min · 4 servings     Ingredients   • 8 large carrots (peeled and sliced diagonally. 1/4 inch slices)  • 2 tbsp butter  • 1/2-1 tbsp brown sugar   • 2-2 1/2 tbsp honey  • 1/4 tsp kosher salt  • Additional kosher salt to taste (add at the end)  Instructions   • Peel and slice carrots diagonally   • Turn skillet on medium high heat  • Add 2 tbsp butter   • Add carrots  • Cover with lid (do not stir)  • Cook for 4-5 minutes   • Take lid off and stir  • Add 1/4 tsp kosher salt, brown sugar and honey   • Stir  • Cook for 5-7 more minutes (stirring occasionally)  • Once carrots are tender and glaze is brown and bubbly, turn heat off  • Add a pinch more kosher salt   • Stir  • Enjoy!
