Ingredients

Produce
• 1 Garlic clove, large
• 1 Shallot, large
• 2 Sweet potatoes, large
Condiments
• 2 tbsp Honey
Baking & Spices
• 2 tbsp Brown sugar, light
• 1 cup Mustard seeds, yellow
• 1 1/4 tsp Salt
• 2 Salt and pepper
• 1/4 tsp Turmeric
Oils & Vinegars
• 2 tbsp Vegetable oil
Dairy
• 8 tbsp Butter, unsalted
• 1/2 cup Heavy cream
Other
• 1 ¾ cups plus, 2 tablespoons apple cider vinegar, divided
• 6 (u10) sea scallops, abductor muscles removed (crescent shaped muscle on the side of scallops, should come off easily)
