Kransekake - A Danish Wedding Cake

Kransekake (means "wreath cake"). This is a specialty pastry used at events like weddings. Although it's called a cake, the consistency is more like a cookie. It's made with almond paste and is delicious. I got married in New York, but just had to have one of these at my wedding as a nod to my heritage.

The kransekake (literally ring cake) is a traditional Norwegian dessert, usually eaten on special occasions such as weddings, baptisms, Christmas, or New Year's Eve.
