Lechona Tolimense (Colombian-Style Stuffed Pork)  I MUST TRY THIS RECIPE STAT!!  As a child at my cousin's wedding in Colombia, I saw an actual lechona, which is a whole stuffed, roasted pig.  I had NEVER seen anything like it!  And I have never tasted anything like it since then.  It's kind of hard to fit a whole pig in my oven, so this is perfect!!  Now where can I find two pounds of pork skin?

Lechona Tolimense (Colombian-Style Stuffed Pork)

Lechona Tolimense- consists of a whole pork stuffed with rice, peas, potatoes and spices , cooked in a brick oven for about ten to twelve hours.
