The Two Minute Pumpkin Pie (Paleo) - 3 tbs almond meal (or coconut flour) - 2 tbs coconut oil - 1 egg - 1/2 cup organic pumpkin puree - 1 tsp pumpkin spice - 1 tbsp honey - 1 tsp vanilla extract - a dash of salt - 1/2 tsp baking powder Place in a mug or a small microwave safe dish and microwave for 2 minutes.
Paleo pasta: - 2/3 cup arrowroot powder (plus extra for kneading) - 1 cup almond flour (I use Honeyville brand because I find it to be the most finely ground) - 1 cup tapioca flour (make sure to find a brand that is gluten-free, some brands sneak in wheat products!) - 2 tsp. sea salt - 2 large eggs - 4 egg yolks (from large eggs) - 2 Tbsp olive oil (for cooking the pasta)
