Reworked: Mediterranean Salmon-Quinoa Salad- I'm going to rework it some more, too! This will be my dish for my Book Club tomorrow! Probably won't combine the carbs and the protein in the salmon though.
Mexican Quinoa w/Arugula - Just made this and the only changes I made was to do half quinoa and half couscous and didn't add chicken (I forgot). I'm sure it would be great either way but this was awesome! Great lunch for work!
