Luscious Lemon Cream Roll Cake 🍋✨
Ingredients: 4 large eggs 1 cup granulated sugar 1 cup all-purpose flour 1 tsp baking powder 1/4 tsp salt 1/4 cup fresh lemon juice Zest of 1 lemon 1 cup heavy cream 2 tbsp powdered sugar 2 tbsp lemon juice (for glaze) Zest of 1 lemon (for glaze) Directions: -Preheat oven to 375°F (190°C). Grease and line a 15x10-inch jelly roll pan. -Beat eggs & sugar until thick & pale. -Sift flour, baking powder, and salt. Fold into egg mixture. -Stir in lemon juice & zest. -Pour into pan and bake 12-15 mins until golden. -Cool for a few minutes, then invert onto a sugared towel. Roll up. -Whip cream with powdered sugar until stiff peaks form. -Unroll the cake, spread cream, and re-roll. -For glaze, mix powdered sugar with lemon juice & zest. Drizzle over cake.
