Whenever I start to think, OK, we have not eaten enough vegetables lately, this is what I make. 😂 My girls (usually) love these and they rarely make it into any type of serving dish. We just eat them straight off the pan. - brussels sprouts - olive oil, salt, and pepper - walnuts - Dijon - maple - dried cranberries! The double trip to the oven is necessary for that toasting this on the walnuts and to let the sauce kind of get sticky and yummy. But no oven time for the dried cranberries! They go in at the end otherwise they get really chewy.
