Arepas de Choclo con Quesito (Colombian Corn Cakes with Fresh Cheese)
We made these over the weekend. So good! We couldn't find the right cornmeal so we did a mixture of regular cornmeal and corn flour we found at a mexican food market. I also made my own sazon de goya, but you can find it at the mexican food markets.
BANDEJA PAISA - "Tradionally, Bandeja paisa includes beans, white rice, chicharrón, carne en polvo, chorizo, fried egg, ripe plantain, avocado and arepa, but you can substitute the powdered beef for grilled beef or pork."
"This Arepa Boyacense is from El Boyacá department of Colombia, located in the Andean region of the country, and it is made with yellow pre-cooked corn meal (masarepa), all purpose flour, sugar and fresh cheese. (Gotta) love the combination of sweetness from the sugar with the salty cheese". Looks absolutely delicious.
