Korean Vegetable Pancake (Yachaejeon)

This vegan Korean vegetable pancake are quick and so easy to make. I used a mix of cabbage, carrot, onion, leek and scallions, but you can throw in almost any your favourite vegetable. This pancake best serve with homemade dipping sauce.

Make 2 8 inch pancake
 • Ingredients:
 • 80g cabbage, thinly sliced
 • 80g carrot, thinly sliced
 • 1 jalapeño, sliced
 • 1 small leek, thinly sliced
 • 2 stalks scallions, roughly chopped
 • 1 onion, sliced
 • 125g (1 cup) flour
 • 2 tbsp cornstarch
 • 1/2 tsp salt
 • 1/2 cup water + 2 tbsp water
 • 4 tbsp cooking oil

Dipping sauce:
 • 2 tsp toasted sesame seeds
 • 2 tbsp soy sauce
 • 2 tbsp rice vinegar
 • 1/2 tbsp sugar
 • 1/2 tbsp gochugaru
 • 1-2 tbsp water

1.) Mix together all the dipping sauce ingredients

OATS MIX VEG CHILA - I was thinking it’s been a while I haven’t shared oats recipe. Oats is the healthiest gluten-free whole grain and an excellent source of vitamins, minerals, finer and antioxidants. Beneficial for weight loss, blood sugar levels and reduced risk for heart disease. Further have added besan for protein and lots of veggies making this chila a complete meal. Recipe steps summarised below
 • - In a bowl, take 1.5 cup mildly roasted oats
 • - add 2 tbs besan
 • - add Jeera, salt, turmeric powder, red chilli powder & asafoetida
 • - add some water to make spreadable thick batter (we are adding vegetables which will also release water, so don’t add too much water)
 • - add 1.5 cup finely chopped vegetables (I have used carrots, cabbage, capsicum & onion)

 • 3 cups spaghetti squash, cooked
 • 1/2 cup flour
 • 1 cup whole milk ricotta, drained
 • 1/2 cup grated Parmesan
 • 2 eggs
 • 3 green onions, chopped
 • Salt and pepper
 • Oil for frying
 • Greek yogurt, as garnish
 • Chopped scallions, as garnish


 • Cut spaghetti squash in half, scoop out seeds, wrap in plastic and microwave on high for about 8 minutes. When squash is cool enough to handle, scrape out the insides and squeeze out excess water.
 • Add spaghetti squash to a large mixing bowl. In the same bowl, add flour, cheeses, eggs, green onions, salt and pepper. Mix well to combine. Set batter aside while you heat oil.
 • Heat oil in a large pan over medium-high heat. Carefully add spoonfuls of batter to the hot pan. Flatten and s

 • 1 package chicken meatballs (can sub for turkey or beef meatballs)⁣
 • 1 Spaghetti Squash⁣
 • 1 can Tomato Sauce!⁣

 • Cook spaghetti squash. Poke a few slits in squash with a knife and microwave it for five minutes to soften. Slice it lengthwise, scoop out the seeds, drizzle with olive oil, salt, and pepper, and roast for 40 minutes at 400°F. ⁣
 • Using two forks, shred the spaghetti squash and place strands in a bowl. Set aside.⁣
 • Heat up chicken meatballs according to package directions. Onc

4 Large Idaho Potatoes

1 Large Red Onion

3 T Olive Oil

½ t Red Pepper Flakes – crushed

Salt and Pepper to taste.

Cube potatoes.

Cut onion into large chunks.

Bring cast iron skillet to warm. 

Add oil. 

When water beads on the oil, add onions – fresh red onions from the garden are ideal.

Add potatoes and crushed red pepper

Salt and pepper to taste.

Cook for 20 minutes over medium heat.

Don’t stir too much – you want potatoes to crisp up.

All you need to do is peel one potato and thinly slice it. Then Stacy the slices together and cut thin strips (you can cut thin strips with vegetable peeler as well).

Now take the potato strips in a bowl, add the flour, crack an egg and beat them together. 250g linguine or pasta of choice

2 tbsp olive oil

5 cloves garlic, chopped

2 tbsp gochujang

1 tbsp tomato paste

1/3 cup dairy-free cream

1/2 cup reserved pasta water

1 tbsp vegan butter

Salt, to taste

Freshly cracked black pepper

Parlsey, to garnish


1. Bring a large pot of salted water to the boil. Cook your pasta until al dente. Drain and reserve 1/2 cup of the pasta water.

2. In the meantime, heat olive oil over medium heat and fry garlic until softened and fragrant.

3. Add in the gochujang and tomato paste and fry for 1 minute. Pour in the cream and stir to combine.

4. Add in the cooked pasta along with the pasta water and cook until thickened and glossy. Season with salt to taste.
