Mini Omelettes: 1 pound cooked breakfast meat, 1 cup sauteed veggies (optional), 8 large eggs, 1/4 cup milk or cream, 1/2 tsp oil, 1/2 tsp baking powder, salt and pepper to taste, 1/2 cup grated cheese. Whisk ingredients together except meat, veggies and cheese; divide meat and veggies evenly into 12 cupcake wells, pour egg mixture in, top with cheese. Bake for 15-20 minutes at 375. Garnish with more cheese, let rest for 5 minutes. Easily re-heatable.
