SWEET POTATO PUDDING -- 2 lbs sweet potato 1 cup flour 2 cups coconut milk 1 1/2 cups dried fruits/raisins 2 tspn vanilla 1 1/2 grated nutmeg 1 tspn mixed spice 1 cup brown sugar 1 tspn salt 1 tspn margarine. Wash & pare skin off potatoes; Grate coconut, add water and juice thru strainer; Blend flour mixed spice/raisins salt & nutmeg; Combine mixture with grated potatoes & mix well; Add sugar, fruits and coconut milk & mix well; Bake at 350 deg for 40-60 mins or until done.
