Mom's Fish Cakes 12 potatoes 1 large onion 1 large can (or two small) chicken haddie 1 egg (optional) bread crumbs parsley salt & pepper Cook and mash potatoes until creamy. Add onion, egg and chicken haddie. Make into patties, roll in bread crumbs mixed with parsley, salt & pepper. Fry until golden brown on both sides. Makes approx. 12-14 fish cakes. Freeze well.
