Norwegian cream soup

This is a simple and delicious creamy Norwegian fish soup. You can use any type of fish except for herring. You can also use whichever vegetables you prefer or have already, including frozen vegetables - I've included my favorites in the recipe.

Here in North Dakota we love Knoephla Soup! I was introduced to it by my DH and loved it ever since! We have a place called Kroll's Diner run by two older Norwegian ladies! They make it the best I have ever had! The are famous for saying "SIT DOWN AND EAT!" And we do! :)

When we lived in Norway we used to eat lots of fish...this recipe reminds me of a fish soup which was very common there. You can use other fish and shellfish. The potatoes and tomatoes are ingredients I have been adding over the years and listed them as optional.
