Mushroom side dishes
ingredients 2 pounds mushrooms, sliced 1/4 inch thick 2 tablespoons balsamic vinegar 1 tablespoon soy sauce (or tamari) 3 cloves garlic, chopped 1/2 teaspoon thyme, chopped salt and pepper to taste directions Marinate the mushrooms in the mixture of the remaining ingredients for 30 minutes. Skewer the mushrooms and grill over medium-high heat until just tender and slightly charred, about 2-3 minutes per side.
Morel mushrooms. I soak mine in salt water in the fridge. When I'm ready to cook them, I roll or blend saltine crackers to make fine crumbs or flour. I place the crumbs in an air tight bag. I dip the mushrooms in milk and then shake them in the bag of cracker crumbs to coat. Then, I fry them in oil. It just takes minutes on each side. Yum!!
