Sweet Potato Souffle Cupcakes- Inspired by everyone's favorite Thanksgiving side dish. These were so moist from the sweet potatoes and pineapple, and I loved that hint of cinnamon along with the toasted marshmallow topping!

La Comedia's Famous Sweet Potato Souffle. For a 9x13 pan, use 2 large cans of sweet potatoes, drained. Lower the sugar to 1/4 cup. Double the topping, cuz it's the best part! Sorry, no picture, but this is always a HUGE hit! You can prepare the day before and refrigerate, but don't put the topping on until you're ready to bake (increase the bake time if putting in cold).
