Oatmeal Cottage Cheese Pancakes.  3 whole eggs, 1 cup cottage cheese, 3/4 cup oats, 1 tsp cinnamon,  1 tsp vanilla, 1/2 tsp baking powder, 1/4 tsp salt.  Blend all ingredients in blender and cook on griddle as you would cook any pancake...makes 8.  Original recipe calls for flax meal and blueberries which I did not have or use.  These are SO very delicious and taste like French toast.  Even my uber picky 10 year old said he was in heaven while eating them!
