Nosotros, mis hermanos y yo, literalmente nos peleábamos por ellas, y eran, junto a la reinitas, las galletas más ricas del universo 😂 El secreto para unas Newton perfectas consiste en dividirlas SIN SEPARARLAS, hornearlas a medias para que no pierdan la forma y luego separarlas para terminar de hornearlas. Si deslizan verán la receta que desarrollé para el recetario de Ronco👉 son algo trabajosas y yo diaria que no son para principiantes pero el resultado habla por si solo ¿verdad? A mi me gusta también ponerle a la masa algo de afrecho, a veces las hago con harina blanca y harina integral y las relleno de ciruelas pasas que es menos dulce, pero es temporada de guayaba así que a aprovecharlas🙌🏻 También se puede usar la conserva de guayaba rebanada y así se ahorran el trabajo de la paleta😅 Ya saben: Si las hacen me etiquetan ¡Ah! Salvatore Grillo on Instagram: "Paste di mandorla Siciliane 👨‍🍳 "Inspiration is everywhere, you just need to know how to find it" Ingredients: 500g of almonds, peeled 500g of sugar 1 tablespoon of honey 2 egg whites 1 lemon, grated zest powdered sugar (optional) Instructions: Preheat your oven to 180°C/350°F. Spread the peeled almonds on a baking sheet and roast them in the oven for about 10-15 minutes, until they are lightly golden and fragrant. Remove them from the oven and let them cool completely. In a food processor, grind the almonds into a fine powder. In a large mixing bowl, combine the almond powder, sugar, honey, egg whites, and grated lemon zest. Mix well until you get a smooth and consistent dough. Dust your hands with powdered sugar and shape the dough into small balls (about 2-3cm in diameter) or any other desired shape (In this case I used a piping bag to form the shapes) Place the balls on a baking sheet lined with parchment paper and bake for about 10-15 minutes, until they are lightly golden. Remove from the oven and let them cool on a wire rack. Optional: dust the cooled pasta di mandorla with powdered sugar before serving. Enjoy 😁 Note: This recipe yields about 25-30 pieces of pasta di mandorla, depending on the size of the balls you shape. Una #receta que me trae muchos recuerdos de mis comienzos en la pastelería, cuando hace ya unos cuantos años, las hice por primera vez en la Escuela del Gremio de Pastelería de Barcelona. Esta no es exactamente aquella receta, pero saben igual de buenas! GALLETAS RELLENAS DE PRALINE DE AVELLANAS Para 25 galletas redondas El relleno 120 g de avellanas tostadas 80 g de azúcar 60 g de Chocolate blanco Pon en una sartén el azúcar y las avellanas y llévalas al fuego hasta que caramelice. Viértelas sobre un papel para horno y déjalas enfriar. Tritúralas en el vaso del túrmix hasta que se convierta en una crema. Añádele el chocolate blanco picado y tritura unos minutos mas hasta que el chocolate se funda. Llévalo a la nevera para que endurezca un poco. Para las galletas 150 g de mantequilla pomada 100 g de azúcar glace 50 g de clara de huevo 220 g de harina 1 cdta de levadura química Bate la mantequilla con el azúcar hasta que este pálida. Añade la clara y continúa batiendo unos minutos más. Incorpora la harina y la levadura y revuelve lo justo y necesario para unir. Coloca la masa en una manga pastelera con boquilla risada y escudilla las galletas sobre una bandeja con papel para horno. Lleva las galletas a la nevera unos 20 minutos. Hornea las galletas a 170ºC unos 15 minutos o hasta que estén doradas. Unta la mitad de las galletas con una cucharada de crema de praliné y únelas con el resto de galletas para obtener un sándwich. Consérvalas en nevera en un recipiente hermético.
