It's so delicious, and I invariably get a soft open crumb. 450g @breadtopia whole grain sprouted spelt flour 330g water 100g starter 9g salt Mix the ingredients Let rest minimum of 30 minutes, then laminate Perform 2-4 rounds of coil folding Preshape, bench rest, and shape Final proof Preheat your baking vessel, then bake: 18 minutes at 500F lid on 8 minutes at 450F lid on 8-10 minutes at 450F lid off
