Nacho casserole....in 13x9 pan layer bottom with crushed tortilla chips,cover that with a mix of hamburger cooked with a can of chilli (with beans) and 1cup of mild salsa,next layer of sour cream,then layer of Mexican cheese, top with diced tomatoes and green onions...bake at 350 for 25 minutes...delicious!!!!
Easy cheese quesadillas... 2 soft tortilla shells (wheat is also a great option); layer of mild cheddar on one half of the shell, jalepeno peppers, Pace mild salsa, another layer of Mexican mix shredded cheese. Fold over shells, place in moderate heated skillet. Brown on one side, flip over both shells, brown other side. Cut each shell into three pieces. Serve immediately with sour cream and salsa.
Ranch Salsa Dip Ranch Salsa 8 ounces light cream cheese 8 ounces light sour cream 1 ounce Hidden Valley Ranch Salad Dressing mix 10 ounce can Rotel diced tomatoes and green chilies (mild or regular, I used mild but wished I used regular), well drained Mix all ingredients, adding one at a time, then chill. Serve with Wheat Thins, tortilla chips, etc..
